What could be better than chocolate and peanut butter in a protein-packed cookie?!?!?
This delicious treat has under 50 calories per cookie and is ready in 35 minutes!
Makes 40 cookies

½ cup ICBIN butter, light
1 ¼ cup stevia
1 tsp maple extract
1 tsp vanilla extract
1 egg, room temperature
2 Tbsp almond milk, room temperature
¾ cup coconut flour
3 scoops @magnumsupps peanut butter cups protein powder
¼ tsp salt
½ tsp baking soda
¼ tsp baking powder
½ cup powdered peanut butter
Preheat oven to 350 F. Grease a baking sheet and set aside.
Cream together the butter and stevia. Add the maple and vanilla extract, egg, and milk and mix until well combined.
Mix dry ingredients in a separate bowl. Add to the wet mixture and beat on low first, and then high once the mixture is well combined. A sticky dough should form.
Scoop the cookies onto the baking sheet. The recipe should make 40 cookies. Flatten with a fork. Dip the fork in Monk sweetener to prevent sticking.
Bake for 6-7 minutes. Take cookies off baking sheet & let cool on rack.
