Ingredients:

1/4 cup vanilla protein powder

1 Tbsp all purpose flour (or gluten free flour mix)

1/2 cup blueberries

1 Tbsp powdered PB

2 Tbsp coconut flour

3 Tbsp stevia

1.5 tsp baking powder

1/2 cup 0% fat Greek yogurt

1 Tbsp unsweetened applesauce

5 Tbsp egg whites

1 tsp lemon extract

1 Tbsp lemon zest



Glaze:

2 Tbsp vanilla protein powder

1 Tbsp coconut flour

2 Tsp sugar free vanilla pudding

3 Tbsp stevia

1 tsp lemon extract

1 tsp fresh lemon juice

almond milk (enough to reach glaze-like consistency)

Icing:

2 Tbsp vanilla protein powder

1 Tbsp powdered sugar

1 Tsp sugar free vanilla pudding mix

2 Tsp Stevia

1 Tbsp 0% plain Greek yogurt

1 Tsp fresh lemon juice ———————————————————-

Directions:

Preheat oven to 350. Grease a donut pan and set aside.

Add all dry donut ingredients to a bowl and mix well. Then add wet ingredients and stir until combined with no lumps. Pour into donut pans. Add blueberries by pushing them down towards the center. Bake for 12 minutes.

For the glaze and icing, mix dry ingredients first, then add wet and mix until desired consistency is met.

Allow donuts to cool to room temp, then dip in glaze & frost with icing...try not to devour them in one sitting..but if you do, it’s okay because they’re Guilt free.
